Chili Cheese Dogs

There is a special place, deep down in my heart, for…CHILI CHEESE DOGS! As my son would say, “Hot dog, hot dog, hot diggity dog!” I love me a good chili dog and these at out of this world!

If you are new to the website, you may not know that my wife does not eat red meat and is gluten free. So, whenever she is traveling for work or out for a girls night (not lately as this is 2020 and kind of a bust) and I get to cook dinner for either myself or me and the kids, this is always an option that is considered. And I mean, always! I mean, look at how delicious those look. I’m salivating writing this…I’ll be right back.

Ingredient List

  • 2-3 cups Smoked Chili (check out our recipe, it's good! Otherwise, use whatever chili you have)

  • 8 hot dogs – I prefer all beef

  • 8 hot dog buns, split (to make this gluten free, use gluten free hot dog buns)

  • 1-2 cups sharp cheddar cheese, shredded

  • 2 tablespoons butter at room temperature

  • Optional: Diced onion (I prefer yellow sweet onions), mustard, jalapenos, pickled jalapenos, sliced scallions, the list goes on and on and I urge you to have fun with it!

Instructions

Step 1: Preheat your grill to 400-450 degrees.

Step 2: Place 1-2 cups smoked chili in a sauce pot, place on the grill (or stovetop) to heat up, stirring occasionally. Once brought to temp, move to either the top rack of your grill or over low heat to stay warm.

Step 3: With your butter at room temperature, spread the butter on the hot buns and place on the grill over direct heat, uncovered, until toasted. Roughly 2 minutes, set aside.

Step 4: Place the hot dogs over direct heat, uncovered, and cook until you have a nice char on all sides. Do this by rotating the hot dogs often for roughly 6 minutes.

Step 5: Place one hot dog in each hot dog bun and top evenly with chili, cheese and whatever toppings your heart desires.

Get down on those amazing chili dogs!
