Grilled Peach Cobbler

This is summer in a dessert. Oh me, oh my. This came out absolutely perfect! The warmth of the grilled peaches with a brown sugar glaze, the chill of vanilla bean ice cream and the crunch of the crumble made this dessert absolutely to die for! This is the perfect summer dessert while peaches are in season.

Oh, did I mention it was made gluten-free? Even the crumble thanks to the wifey. I’ve mentioned before but my wife is gluten-free and has become quite a good baker. She kindly prepared the crumble for this de-lish dessert.

Ingredient List


Crumble

Peaches

  • 3 peaches, halved and deseeded

  • 2 tablespoons melted butter

  • 2 tablespoons brown sugar

  • Ice cream (suggest vanilla bean)

Optional:

  • ½ teaspoon cinnamon (or more to taste)

  • Honey, for garnish

  • Mint, chopped, for garnish

Instructions

Crumble

Step 1: Pre-heat the oven to 350.

Step 2: Mix all ingredients. Place a piece of parchment paper on a baking sheet and place a thin layer of the mixture down.

Step 3: Bake for 10-15 minutes keeping a close eye to ensure crumble doesn’t burn.

Step 4: Remove from oven, set aside and let cool.

Peaches

Step 1: Pre-heat your grill on high heat. My grill gets to 500 degrees this way.

Step 2: Melt the butter, add brown sugar and cinnamon, stir until combined.

Step 3: Brush the peaches on both sides with mixture.

Step 4: Place the peaches halved side down (so the flat side down) and grill for 3-4, flip and grill an additional 3-4 minutes until soft. Remove from grill.


Step 5: Add a scoop of your ice cream of choice to the middle of peach, top with the crumble, drizzle with honey and chopped mint.


Viola! One of the best summer desserts you’ll ever try!
