Homemade Tortilla Chips

Chips and dip may be the world's most common appetizer and possibly the easiest. All too often though people go out and buy their tortilla chips. Once you've tried this recipe, you'll never buy tortilla chips again. Why? Because they taste 1000 times better than any bag of tortilla chips.

I still don't quite understand it myself but every single time I make these chips and serve with a salsa, queso, or guacamole, my guests absolutely rage. I really don't understand how something this simple, absolutely destroys store bought chips.

Ingredient List

  • Corn or flour tortillas (or both)

  • Canola oil

  • Salt

  • Paper towels

Supply List

  • Cast iron Dutch oven (or a frying pan if you want to do fewer at a time)

  • Spider Strainer (Oil Strainer) - if you do not have this, tongs will work too

  • Thermometer - These are critical tools to have there are two main types. First, instant read thermometer like this one or this one. The Thermapen is worth its weight in gold and one I use almost every day. I know the price tag seems excessive but it's the best in the business for a reason.

 

Instructions


Step 1: In your Dutch oven or frying pan, bring your oil to 350° Fahrenheit.


Step 2: Cut your tortillas into desired shape of chips. Carefully put in the Dutch oven and cook to desired crispiness.

Step 3: Using the spider strainer, remove the chips from the Dutch oven and lay on the paper towels to drain. Season with salt to taste.
