How to Spatchcock a Turkey

Spatchcock chicken is all the rage but you can also spatchcock a turkey! Everyone wants the picture perfect turkey for the holidays but these come out looking fantastic as well, see below. Not to mention that it cooks quicker and more evenly creating a moist and juicy turkey which is ultimately what you are looking for.

 

Supply List

  • Poultry shears - these really make cutting the chicken very easy and highly suggested

 

Instructions

Step 1: Place your turkey breast side down on a cutting board. Using poultry shears, cut the backbone out of the turkey. Trim off any remaining ribs.

Tip: You can keep the backbone to make poultry stock…or you can discard, your call.


Step 2: Place the turkey breast-side up, then firmly press down with your hands to flatten. Trim off any excess skin. You want to ensure your turkey lays nice and flat.
